Ingredients/Components

  • long grain rice - 2 c
  • medium onion - 1 item
  • parsley
  • chicken bouillon cubes - 5 item
  • green onions - 3 item
  • bell pepper - 1 item
  • large onion - 1 item
  • stalk celery optional - 1 item
  • pork sausage optional - 1/2 lb
  • chicken liver and gizzards - 1 pkg

How to make dirty rice:

Boil the liver and gizzards in a pot of water with the bouillon cubes until tender. When cool, chop the meat into small pieces and save the liquid. Cook the rice with a little less water than you usually use, being careful not to overcook.

Chop the vegetables and mix with the meat. Add the liquid. Cover and simmer for about 15 minutes more. (Be careful to add the liquid slowly, a small amount at a time, to prevent adding too much, causing the rice to overcook.
