Curried scallops
Ingredients/Components
- salt - 1/4 tsp
- butter - 1 tsp
- shredded carrots - 3/4 c
- pepper - 1/8 tsp
- curry powder - 1/4 1/2
- diced celery - 1/2 c
- bay scallops - 1/2 c
- Chablis wine - 2 tsp
- vegetable oil cooking spray - 1 item
- chopped chives optional for garnish - 1 item
How to make curried scallops:
Coat a medium nonstick skillet with vegetable oil. Place over medium-high heat until hot. Add next 3 ingredients; saute 1 1/2 to 2 minutes or until crisp-tender. Remove from heat and set aside. Keep warm.Re-coat skillet with oil; add margarine or butter. Place over medium-high heat. Add scallops; saute over heat 30 seconds. Add wine, curry powder and salt; saute until scallops are done. Serve over rice with vegetables. Serves 2.
