How to make crispy duck:

Mix salt, Accent and white pepper. Defrost the duck first. Rinse inside and outside of duck and let it dry for half an hour. Rub mixture evenly on the duck and inside the cavity. Put duck in the refrigerator for about 24 hours.

Steam duck for 2 hours, drain and let it stand in an airy place for half hour. Deep fry the duck in oil for 5 to 8 minutes (around 400°) or until the skin turns crispy.
