  • sugar - 1 c
  • eggs - 2 item
  • vanilla - 1 tsp
  • water - 2 c
  • whole milk - 6 c
  • rice Carolina - 1 c

How to make creamy rice pudding:

In a stainless steel pot, beat eggs thoroughly. Add sugar, milk, vanilla, water and rice. Mix well. Bring to a slight boil, then lower heat and cook for about one hour, stirring frequently. Pour into a bowl, when slightly cooled off, and refrigerate overnight or 8 hours.

When ready to serve, pour 1/2 to 3/4 cup heavy cream over it, mixing it in well. Sprinkle with cinnamon or nutmeg.

For a healthier version, use 2% milk instead of whole and light cream instead of heavy cream.
