Cranberry nut bread
Ingredients/Components
- sugar - 1 c
- chopped nuts - 1 c
- flour - 2 c
- baking powder
- baking soda - 1/2 tsp
- melted butter - 2 Tbsp
- boiling water - 2 Tbsp
- egg, well beaten - 1 item
- fresh cranberries, halved - 1 c
- orange juice and rind - 1 item
How to make cranberry nut bread:
In a bowl, sift together dry ingredients. Squeeze orange juice into cup measure. Add grated orange rind, butter and enough boiling water to make 3/4 cup. Combine orange juice mixture and egg. Stir liquid into dry ingredients and stir only until dry mixture is dampened. Add chopped nuts and cranberries. Pour into a greased 9 x 5 x 3-inch loaf pan. Push batter up towards edges, leaving center slightly hollowed. Let batter stand for 20 minutes in pan before baking. Bake in a preheated 350° oven for 60 to 70 minutes. Remove from pan and cool.Note: May substitute regular orange juice for orange. It works just as good.
