Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- vanilla - 1 Tbsp
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- nutmeg - 1 tsp
- soda - 1/2 tsp
- eggs, beaten - 2 item
- baking powder
- shortening - 1/2 c
- all-purpose flour - 2 c
- ginger - 1/2 tsp
- grated orange peel - 2 tsp
- orange juice - 3/4 c
- coarsely chopped cranberries
How to make cranberry muffins:
In a large bowl, combine the flour, sugar, baking powder, soda, salt, spices and orange peel. Cut in shortening until crumbly. Stir in orange juice, eggs and vanilla (just until moistened). Fold in cranberries and nuts. Fill muffin tins (greased or paper-lined) 2/3 full. Bake at 375° for 18 to 20 minutes. Yield: 1 1/2 dozen muffins.Recipe categories: Breads, Quick breads, Muffins.
