Crabmeat au gratin
Ingredients/Components
- salt - 1 tsp
- egg yolks - 2 item
- all-purpose flour - 1/2 c
- grated Cheddar cheese - 1/2 lb
- onion, chopped - 1 c
- can evaporated milk - 1 oz
- black pepper - 1/2 tsp
- red pepper - 1/2 tsp
- stick margarine or butter - 1 item
- white crabmeat - 1 lb
- rib celery, finely chopped - 1 item
How to make crabmeat au gratin:
Saute onion and celery in butter until onion turns clear. Blend in flour well. Pour in the milk gradually, stirring constantly. Add egg yolks, salt and red and black peppers. Cook 5 minutes. Carefully blend in crabmeat, trying not to break up. Place in lightly greased casserole or individual dishes. Sprinkle with cheese.
