Crab stuffed mushrooms
Ingredients/Components
- olive oil - 2 Tbsp
- fresh parsley, chopped - 1 Tbsp
- heavy whipping cream - 1/2 c
- crabmeat - 6 oz
- breadcrumbs - 1 c
- fresh basil, chopped - 1 Tbsp
- onion, finely diced - 1/4 c
- celery, finely diced - 1/4 c
- large mushrooms or 2 portabello mushrooms - 12 item
- chicken broth with 1/8 c - 1/2 c
- slices of Provolone cheese - 1 item
How to make crab stuffed mushrooms:
Cook mushrooms without stems in an ovenproof baking dish under the broiler for 3 minutes.Place olive oil, celery and onion in saut pan over medium heat. Cook for 2 minutes. Add the crab, parsley, basil and cream and cook for 1 minute. Add the breadcrumbs and cook until hot. Spoon the mix into each mushroom cap and top with a slice of Provolone. Cook under broiler until golden.
