Ingredients/Components

  • olive oil - 2 Tbsp
  • fresh parsley, chopped - 1 Tbsp
  • heavy whipping cream - 1/2 c
  • crabmeat - 6 oz
  • breadcrumbs - 1 c
  • fresh basil, chopped - 1 Tbsp
  • onion, finely diced - 1/4 c
  • celery, finely diced - 1/4 c
  • large mushrooms or 2 portabello mushrooms - 12 item
  • chicken broth with 1/8 c - 1/2 c
  • slices of Provolone cheese - 1 item

How to make crab stuffed mushrooms:

Cook mushrooms without stems in an ovenproof baking dish under the broiler for 3 minutes.

Place olive oil, celery and onion in saut pan over medium heat. Cook for 2 minutes. Add the crab, parsley, basil and cream and cook for 1 minute. Add the breadcrumbs and cook until hot. Spoon the mix into each mushroom cap and top with a slice of Provolone. Cook under broiler until golden.
