Country vegetable soup


Ingredients/Components
- pkg - 1 oz
- cloves garlic, minced - 2 item
- cans chicken broth - 2 oz
- can tomato sauce - 1 oz
- olive oil - 3 Tbsp
- small bay leaf - 1 item
- zucchini, sliced - 1 c
- stalks celery, chopped - 2 item
- thyme - 1/4 tsp
- medium carrot, peeled and sliced - 1 item
- small yellow onion, chopped - 1 item
- cans Great Northern or pinto beans - 2 oz
- Kitchen Bouquet - 1 Tbsp
- potato, diced - 1 c
- cabbage, shredded - 1 c
How to make country vegetable soup:
In large heavy bottom pot, heat oil. Saut?© celery, carrot, garlic and onion over medium heat until tender (about 15 minutes). Add beans. Add remaining ingredients and simmer 1 hour. May serve sprinkled with Parmesan cheese. Serves 6.Recipe categories: Vegetables, Soups & stews, Pasta.
