Ingredients/Components

  • pkg - 1 oz
  • cloves garlic, minced - 2 item
  • cans chicken broth - 2 oz
  • can tomato sauce - 1 oz
  • olive oil - 3 Tbsp
  • small bay leaf - 1 item
  • zucchini, sliced - 1 c
  • stalks celery, chopped - 2 item
  • thyme - 1/4 tsp
  • medium carrot, peeled and sliced - 1 item
  • small yellow onion, chopped - 1 item
  • cans Great Northern or pinto beans - 2 oz
  • Kitchen Bouquet - 1 Tbsp
  • potato, diced - 1 c
  • cabbage, shredded - 1 c

How to make country vegetable soup:

In large heavy bottom pot, heat oil. Saut?© celery, carrot, garlic and onion over medium heat until tender (about 15 minutes). Add beans. Add remaining ingredients and simmer 1 hour. May serve sprinkled with Parmesan cheese. Serves 6.
