Ingredients/Components
- butter, softened - 1/2 c
- vanilla - 1 tsp
- milk
- salt - 1/2 tsp
- butter - 1/4 c
- baking powder - 2 tsp
- egg - 1 item
- raisins - 1/4 c
- nuts, chopped - 1/2 c
- honey - 3/4 c
- whole wheat flour - 2 c
- yogurt - 1 c
- nuts, chopped optional - 1/4 c
How to make coffee cake:
Topping:1/4 c. milk1/4 c. butter1/2 c. nuts, chopped1/2 c. honey Preheat oven to 350°. In a large mixing bowl, sift flour, baking powder and salt together. Mix in 3/4 cup of honey. Cut in 1/2 cup of butter with a fork, 2 knives or pastry blender.In a small mixing bowl, beat egg and add it along with yogurt and vanilla to flour. Add nuts and raisins. Pour into greased, 8 x 8-inch cake pan.
Topping: In a small saucepan, bring milk, 1/4 cup of butter and 1/2 cup chopped nuts to a boil. Turn off heat and stir in 1/2 cup of honey. Pour topping over cake before baking in preheated oven for 30 minutes.
