Ingredients/Components
- butter, softened - 3/4 c
- sugar
- eggs - 2 item
- salt - 1 tsp
- flour - 1 c
- vanilla flavoring
- flaked coconut - 1 c
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- uncooked quick oats
How to make coconut crisps:
Stir together the flour, baking powder, salt and soda; set aside. In a large bowl, cream the butter and sugar until light. Beat in eggs one at a time. Stir in flour mixture, vanilla and oats, then coconut. Like all crisp oatmeal cookies, these spread, so leave plenty of room on baking sheets. Drop by teaspoonfuls 3 inches apart on ungreased baking sheets. Bake in preheated 375° oven for 10 to 15 minutes or until lightly browned.
