Chinese almond cookies
Ingredients/Components
- sugar - 1/2 c
- salt - 1/8 tsp
- baking powder - 3/4 tsp
- all-purpose flour - 1 c
- pure vanilla extract - 1/2 tsp
- pure almond extract - 1/2 tsp
- large egg, separated - 1 item
- slivered almonds plus more for garnish - 1/4 c
- stick cold, unsalted butter, cut in small pieces - 1 item
How to make chinese almond cookies:
Preheat oven to 325°. In a food processor, process 1/4 cup almonds with the sugar until finely ground. Add the butter and process until incorporated. Add egg white and vanilla and almond extracts; pulse until combined. Add baking powder and salt; pulse until blended. Add the flour and process until incorporated. Transfer the dough to a work surface and divide it into 8 equal pieces. Roll each piece into a ball and arrange about 3 inches apart in a large baking sheet. Lightly flatten the balls into 2-inch rounds. Decorate each cookie by pressing slivered almonds into the dough in a star pattern.In a small bowl, mix the egg yolk with 1 tablespoon cold water and brush over the cookies. Bake until golden, about 20 minutes. Let the cookie cool on the baking sheet for about 5 minutes, then transfer them to a wire rack and cool completely.
