Chicken scampi
Ingredients/Components
- salt - 1 tsp
- stick butter - 1/2 item
- grated Parmesan cheese - 1/4 c
- olive oil - 1/3 c
- black pepper - 1/2 tsp
- large onion, sliced - 1 item
- lemon, juiced - 1/2 item
- head broccoli, cut in bite size pieces - 1/2 item
- whole broiler-fryer chicken breasts, boned, skinned and cut into bite size pieces - 3 item
- linguine thinner than spaghetti - 1 lb
- large green bell pepper, cut in bite size pieces - 1 item
How to make chicken scampi:
In saucepan with salted water, place broccoli and steam 4 minutes or until crisp. In the meantime, boil linguine in salted water for 9 minutes and drain.In large frypan, place butter and olive oil over medium heat. Add onion and green pepper and saute about 5 minutes. Remove from pan and reserve.
To frypan, add chicken and continue to cook, stirring, about 5 minutes. Return onion and green pepper to frypan. Add cooked broccoli and saute about 5 minutes more. Sprinkle with lemon juice, salt and pepper.
Place linguine in serving dish. Top with chicken-vegetable mixture and sprinkle with Parmesan cheese. Serves 4.
