Chicken enchiladas
Ingredients/Components
- pkg - 2 oz
- stick butter - 1/2 item
- chopped onion - 1 item
- bay leaf - 1 item
- Monterey Jack cheese, shredded - 2 c
- flour tortillas - 1 item
- cans chopped green chilies - 2 oz
- to 4 chicken breasts - 2 item
- cartons whipping cream 2 small - 2 item
How to make chicken enchiladas:
Boil chicken breasts with bay leaf. Combine onion and green chiles with butter. Saut?© until onion is cooked (I microwave 10 minutes, stirring every 2 minutes). Mix cream cheese with onion mixture. Combine well. Mix finely chopped chicken. Put about 3 tablespoons of this mixture in a flour tortilla. Roll and place seam side down in pan (9 x 13). Cover with Monterey Jack cheese. Pour whipping cream over all. Bake at 350° for 35 to 40 minutes. This should make 12 tortillas.Most of the time I can get a small casserole of 6 tortillas. Add 1 cup of cheese and 1 small carton of whipping cream.
