Ingredients/Components
- black pepper - 1/2 tsp
- white wine - 1 c
- peas - 1 c
- each - 4 chicken
- rosemary - 1 tsp
- cloves garlic, diced - 2 item
- red onion, sliced - 1/2 c
- large potatoes, sliced - 2 item
- fresh parsley, diced use less if dried - 1/2 c
- celery, diced include celery tops - 1/2 c
How to make chicken and vegetables:
Preheat oven to 375°. Place chicken breasts on bottom of deep, stainless steel, nonstick pan. Sprinkle the parsley, rosemary, garlic and pepper over chicken. Place a layer of cut potatoes across chicken. Sprinkle 1/2 cup of peas over potatoes. Pour wine over mixture. Add another layer of potatoes and peas. Add more wine, if desired. Place onion slices over mixture. Sprinkle with more pepper, garlic and rosemary. Cover with foil. Cook for 1 1/2 to 2 hours. Serves 4.Note: This dish can be made without the chicken. Just add an extra potato and peas to the recipe.
