Carrot muffins
Ingredients/Components
- sugar - 1/2 c
- cinnamon - 1/2 tsp
- milk - 1/2 c
- salt - 1/2 tsp
- baking powder - 2 tsp
- baking soda - 1/2 tsp
- vegetable oil - 1/4 c
- all-purpose flour - 2 c
- raisins - 1/2 c
- shredded carrots - 1 c
- large egg, beaten - 1 item
How to make carrot muffins:
Preheat oven to 425°. Grease 12 muffin pan cups. In large bowl, combine flour, baking soda, salt and cinnamon. In medium bow, whisk carrots, egg, milk, oil, sugar and raisins. Stir into dry ingredients until combined. Spoon into prepared muffin pans. Bake for 20 minutes. Unmold and cool on wire rack. Makes 1 dozen.Recipe categories: Breads, Quick breads, Muffins.
