Carrot cookies



Ingredients/Components
- salt - 1/2 tsp
- brown sugar - 3/4 1
- baking powder - 2 tsp
- boiling water - 1/2 c
- shortening - 1/2 c
- egg, unbeaten - 1 item
- raisins - 1/2 c
- sifted all-purpose flour
- lemon extract - 1 tsp
- finely shredded raw carrots - 1/2 c
How to make carrot cookies:
Pour boiling water over raisins and soak 5 minutes; drain. Combine sugar, shortening, egg and lemon extract in mixing bowl; beat well. Stir in carrots and drained raisins. Sift together flour, baking powder and salt; add to first mixture and blend well. Drop by teaspoonfuls onto greased baking sheet. Bake at 375° for 10 to 12 minutes.
