Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- vanilla - 2 tsp
- chopped pecans - 2 c
- salt - 1 tsp
- flour - 2 c
- eggs, separated - 4 item
- soda - 1 tsp
- grated carrots - 3 c
- baking powder - 2 tsp
- vegetable oil
- powdered sugar - 3 c
- large can crushed pineapple, drained - 1 item
- butter flavor - 1 tsp
- Add oil and beat
How to make carrot cake:
Beat sugar and egg yolks until light. Add oil and beat. Mix together all dry ingredients and add to sugar, egg and oil mixture. Add crushed pineapple, carrots and butter flavor. Add nuts. Fold in stiffly beaten egg whites. Pour into a greased 9 x 13-inch pan and bake at 325° for 45 minutes or toothpick comes out clean.Frosting:1 (8 oz.) pkg. cream cheese3 c. powdered sugar2 tsp. vanilla Mix together cream cheese and powdered sugar.
