Ingredients/Components

  • sugar - 2 c
  • cinnamon - 1 tsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • baking soda - 2 tsp
  • vegetable oil
  • shredded coconut - 1 c
  • flour, sifted - 2 c
  • walnuts, chopped - 1 c
  • crushed pineapple, drained - 1 c
  • raw carrots, shredded - 2 c

How to make carrot cake:

Beat eggs well. Then add the next 7 ingredients and beat until smooth. Stir in the coconut, nuts, pineapple and carrots with a mixing spoon. Pour into a greased 9 x 13-inch cake pan. Bake at 350° for 50 minutes.

When cake is slightly warm, spread with cream cheese frosting.
