Cajun gumbo
Ingredients/Components
- flour - 1 c
- oil - 1 c
- chopped green pepper - 1/4 c
- salt and pepper - 2 Tbsp
- onions - 2 item
- smoked sausage - 1 pkg
- minced garlic cloves - 2 item
- pepper sauce - 2 Tbsp
- chicken, cut into parts - 1 item
- ??? chopped green onions - 1/4 item
How to make cajun gumbo:
In 3-quart pot, boil chicken for 1/2 hour in 3 quarts of water; save broth. In large soup pot, heat oil. Add flour and stir until smooth and dark brown. This is called the flare. Next, add chopped onions, garlic, pepper and green onions; saute about 5 minutes. Add sausage, cut into pieces, and chicken flier and cut into pieces. Saute about 20 minutes, mixing well. Slowly mix in 3 quarts saved chicken broth and add salt and pepper sauce. Simmer, uncovered, about 30 minutes.Recipe categories: Main dish, Gumbo, Stew.
