Blueberry coffee cake
Ingredients/Components
- butter, softened - 2 Tbsp
- sugar - 1/2 c
- cinnamon - 1/4 tsp
- chopped pecans - 3/4 c
- milk - 1/2 c
- salt - 1/2 tsp
- flour - 1 c
- oil - 1/2 c
- baking powder - 2 tsp
- egg - 1 item
- lemon juice - 1 Tbsp
- frozen blueberries, thawed and drained - 1 c
How to make blueberry coffee cake:
Combine first four ingredients in a bowl; set aside. Combine egg, milk, oil and lemon juice. Add to dry ingredients, mixing well. Pour batter into a greased 8-inch square pan. Sprinkle with blueberries. Combine remaining ingredients; sprinkle over blueberries. Bake at 350° for 35 to 40 minutes.Recipe categories: Breads, Blueberries, Coffee cakes.
