  • clove garlic, minced - 1 item
  • chopped onion - 1/2 c
  • chopped celery - 1/2 c
  • can chicken broth - 1 oz
  • olive oil - 2 Tbsp
  • crushed red pepper - 1/4 tsp
  • uncooked converted rice - 1 c
  • kielbasa, thinly sliced - 8 oz
  • cans Ranch Style brand black-eyed peas - 2 oz

How to make black-eyed peas:

In a large skillet, saute onion, celery and garlic in hot olive oil until onion is soft. Stir in remaining ingredients. Heat to a boil; reduce heat and cover tightly. Simmer 30 to 40 minutes or until liquid is absorbed.
