  • sugar - 1 c
  • eggs - 2 item
  • milk - 2 Tbsp
  • salt - 1/2 tsp
  • flour - 2 c
  • butter - 1/2 c
  • baking powder - 2 tsp
  • baking soda - 1/4 tsp
  • pecans or walnuts, chopped - 3/4 c
  • ripe, medium size bananas - 3 item

How to make banana nut bread:

Grease a loaf pan, 9 x 5 x 3-inch size. Cover bottom well and sides, 1/2 way up only. Mix the flour, baking powder, baking soda and salt and set aside. In a mixer, cream the butter and sugar until fluffy. Add eggs and continue to beat. In another small dish, mash the bananas with a fork and stir in the milk.

Alternately add the banana mixture and flour mixture to the creamed mixture, beating until smooth after each addition. Fold in the nuts.

Pour in pan and bake at 350° for 50 minutes or until a wooden pick inserted in the center comes out clean. A crack on top of the loaf is not unusual.

Cool on a wire rack in pan for about 10 minutes. Turn bread out of pan. For easier cutting, wrap in foil and keep overnight.
