Baked scallops
Ingredients/Components
- butter - 3 Tbsp
- chopped fresh parsley - 2 Tbsp
- sliced mushrooms - 1 c
- Italian bread crumbs - 1/3 c
- sea scallops - 1 lb
- sliced scallions - 4 item
- chicken broth or juice from 1/2 lemon - 1/4 c
How to make baked scallops:
Wash scallops well and drain on paper towels. Saute mushrooms and scallions in butter. Put scallops in well-buttered casserole dish. Spread sauteed mushrooms and scallions over scallops and top with parsley. Pour on the chicken broth and squeeze lemon over top. Sprinkle bread crumbs over all. Bake in preheated oven at 375° for 15 to 20 minutes. Serve over rice. Makes 4 servings.Recipe categories: Appetizers, Main dish, Scallops.
