Ingredients/Components
- sugar - 1 c
- vanilla extract
- salt - 1/8 tsp
- baking soda - 1 tsp
- vegetable oil - 1/2 c
- large egg - 1 item
- all-purpose flour
- ground cinnamon - 1/2 tsp
- fresh lemon juice - 2 Tbsp
- grated lemon peel - 3/4 tsp
- coarsely grated, peeled green apples about 2 large apples - 2 c
- chopped, toasted pecans 2 oz - 1/2 c
How to make apple muffins:
Preheat oven to 350°. Grease muffin tins (1/2 cup muffin tins). Sift flour, baking soda, cinnamon and salt into a medium bowl.Combine sugar, oil, egg, lemon juice, vanilla and lemon peel in a large bowl. Whisk to blend. Mix in dry ingredients, then apples and pecans. Spoon 1/3 cup batter into each muffin cup. Bake until done. Use toothpick in center method to test (about 35 minutes). Cool muffins on rack slightly. Serve warm. Makes 12 muffins.
