  • sugar
  • water - 1/4 c
  • grated orange peel - 2 tsp
  • cranberries - 2 c
  • egg white, beaten - 1 item
  • quick cooking tapioca - 1/3 c
  • additional sugar - 1 item
  • sliced, peeled apples - 3 c
  • pastry for double-crust pie - 1 item

How to make apple cranberry pie:

In a saucepan, combine the cranberries, sugar, tapioca, water and orange peel. Bring to a boil, stirring occasionally. Remove from the heat and stir in apples. Set saucepan in a pan of cold water for 10 minutes, stirring occasionally. Line pie plate with bottom pastry. Pour filling into crust. Top with remaining pastry or a lattice crust. If using a full crust, cut a few slits in top. Beat egg white and water until foamy and brush over top pastry. Sprinkle with additional sugar. Bake at 375° for 45 to 55 minutes or until crust is golden brown and filling is bubbly. Cool. Yields 6 to 8 servings.
