Zucchini with cheese
Ingredients/Components
- sour cream - 1 c
- salt
- flour - 1/4 c
- pepper - 1/4 tsp
- grated Parmesan cheese - 1/2 c
- olive oil - 1/4 c
- medium tomatoes, sliced - 2 item
- zucchini
- dried oregano or basil
How to make zucchini with cheese:
Preheat oven to 350°. Grease an 8 x 8 x 2-inch baking dish. Slice zucchini crosswise into 1/4-inch slices. In medium bowl, combine flour with 1/2 teaspoon salt, 1/2 teaspoon oregano and 1/8 teaspoon pepper. Toss zucchini slices in seasoned flour to coat well. Slowly heat oil in a large skillet. Saute zucchini until golden brown. Drain. Cover bottom of dish with zucchini. Top with tomato slices. Combine sour cream and remaining salt, oregano and pepper. Spread evenly over tomatoes. Sprinkle with grated cheese. Bake 30 to 35 minutes. Serves 6. Recipe can be doubled.Recipe categories: Squash, Low calorie, Vegetables.
