Zucchini soup
Ingredients/Components
- sugar - 1 tsp
- salt - 1 tsp
- chopped onions - 1 c
- oregano - 1 tsp
- basil - 1/2 tsp
- cans tomatoes - 2 item
- garlic powder or granules - 1/4 tsp
- sweet sausage some like hot sausage - 1 lb
- celery 1/2-inch pieces, 3 medium - 2 c
- zucchini 1/2-inch pieces
- Italian seasoning Hidden Valley, dry - 1 Tbsp
How to make zucchini soup:
If zucchini skin seems tough, peel them. If zucchini seeds are large, scoop them out.Brown sausage in Dutch oven. Add celery. Cook 10 minutes, stirring constantly. Add remaining ingredients. Simmer covered 20 minutes.
Optional: Two green peppers (1 1/2-inch strips) can be added now if desired and cooked 10 minutes longer.
