Ingredients/Components
- salt - 3/4 tsp
- vegetable oil for frying - 1 item
- pepper - 1/8 tsp
- eggs, slightly beaten - 2 item
- green onions, chopped - 2 item
- flour or Bisquick - 1/3 c
- Parmesan cheese optional - 1/4 c
- zucchini unpared, shredded - 2 c
How to make zucchini rounds:
In mixing bowl, stir together the flour, cheese, salt and pepper. Stir in the beaten eggs until the mixture is moistened. Fold in zucchini. Pour oil in skillet 1/8-inch and heat. Drop slightly rounded tablespoonfuls of the batter into oil. Cook, turning once for about 1 minute on each side or until golden brown.Recipe categories: Squash, Appetizers, Vegetables.
