Zucchini relish
Ingredients/Components
- shredded zucchini - 12 c
- diced onions - 4 c
- salt - 5 Tbsp
- vinegar
- sugar - 6 c
- dry mustard - 1 Tbsp
- cornstarch - 3/4 Tbsp
- nutmeg - 3/4 tsp
- turmeric - 3/4 tsp
- celery seed
- pepper - 1/2 tsp
- red pepper, diced - 1 item
- green pepper, diced - 1 item
How to make zucchini relish:
Mix zucchini, onions and salt; let set overnight. Rinse and drain in the morning. Add the remaining ingredients and mix well. Cook for 30 minutes. Pour into jars and seal.Recipe categories: Squash, Condiments, etc., Zucchini.
