Ingredients/Components

  • zucchini about 5 lb - 10 c
  • large onions - 4 item
  • large green peppers - 4 item
  • large red peppers - 4 item
  • salt - 1/2 c
  • cider vinegar
  • sugar - 4 c
  • cornstarch - 2 Tbsp
  • turmeric - 1 tsp
  • ground nutmeg - 1 tsp
  • celery seed - 2 tsp
  • pepper - 1/4 tsp

How to make zucchini relish:

Grind zucchini, onions and peppers in food grinder or processor until medium coarse. Sprinkle with 1/2 cup salt and let stand overnight. Drain and rinse well in cold water. Mix vinegar, sugar, cornstarch and spices. Bring to a boil in a large kettle. Add ground vegetables, then simmer 30 minutes. Ladle into hot jars, leaving 1/2-inch at top. Process in boiling water for 15 minutes. Makes 7 pints.
