Zucchini relish
Ingredients/Components
- zucchini about 5 lb - 10 c
- large onions - 4 item
- large green peppers - 4 item
- large red peppers - 4 item
- salt - 1/2 c
- cider vinegar
- sugar - 4 c
- cornstarch - 2 Tbsp
- turmeric - 1 tsp
- ground nutmeg - 1 tsp
- celery seed - 2 tsp
- pepper - 1/4 tsp
How to make zucchini relish:
Grind zucchini, onions and peppers in food grinder or processor until medium coarse. Sprinkle with 1/2 cup salt and let stand overnight. Drain and rinse well in cold water. Mix vinegar, sugar, cornstarch and spices. Bring to a boil in a large kettle. Add ground vegetables, then simmer 30 minutes. Ladle into hot jars, leaving 1/2-inch at top.
