Zucchini relish
Ingredients/Components
- sugar - 6 c
- salt - 5 Tbsp
- cornstarch - 1 tsp
- vinegar
- dry mustard - 1 tsp
- pepper - 1/2 tsp
- celery seed - 2 tsp
- turmeric - 1 tsp
- onions, ground - 4 c
- zucchini, ground - 10 c
How to make zucchini relish:
Do not peel zucchini. Scrape out seeds. Grind zucchini and onions; add salt and leave overnight. Refrigerate. Rinse and drain. Add vinegar, dry mustard, turmeric, cornstarch, celery seed, pepper and sugar. Mix ingredients well. Cook until clear, about 30 minutes, over medium heat, stirring to keep from sticking.
