Zucchini relish
Ingredients/Components
- sugar - 6 c
- salt - 5 Tbsp
- cornstarch - 2 Tbsp
- nutmeg - 1 tsp
- vinegar
- dry mustard - 1 tsp
- celery seed - 2 Tbsp
- turmeric - 1 Tbsp
- onions, ground - 2 c
- red pepper, ground - 1 item
- green pepper, ground - 1 item
- zucchini, peeled and ground - 10 c
How to make zucchini relish:
Combine the zucchini, onions and salt; let stand for 6 hours. Drain and rinse. Grind the green and red peppers; add to the zucchini mixture. Add the remaining ingredients. Cook for 30 minutes, stirring well. Pack in canning jars.Recipe categories: Squash, Condiments, etc., Zucchini.
