Zucchini relish
Ingredients/Components
- sugar - 5 c
- salt - 5 Tbsp
- cornstarch - 1 tsp
- nutmeg - 1 tsp
- cider vinegar
- dry mustard - 1 tsp
- green pepper, diced - 1 item
- celery salt - 2 tsp
- turmeric - 1 tsp
- large zucchini - 4 item
- sweet red pepper, diced - 1 item
- to 6 onions - 4 item
How to make zucchini relish:
Core and shred zucchini. Measure 10 cups. Shred onion. Measure 4 cups. Soak overnight, covered with water and salt. Drain and rinse thoroughly. Put in large pot. Add all ingredients. Bring to a boil. Boil 30 minutes. Put in pint jars. Process in hot water bath for 10 minutes.Recipe may be halved or quartered but keep water soak at 5 tablespoons salt.
Reminder: Salt is for soak only. Smaller quantities need not be processed and will keep refrigerated for up to 1 month.
