Ingredients/Components

  • sugar
  • cornstarch - 1 rounded
  • nutmeg - 1 tsp
  • cider vinegar
  • dry mustard - 1 tsp
  • ground black pepper - 1/2 tsp
  • celery seed - 2 tsp
  • turmeric - 1 tsp
  • large red pepper, finely chopped - 1 item
  • large green pepper, finely chopped - 1 item
  • zucchini, chopped through food processor - 10 c
  • large onions, chopped through food processor - 4 item

How to make zucchini relish:

Mix together zucchini, onions and peppers in large container. Sprinkle with 5 tablespoons salt. Mix well and let stand overnight. In morning, place mixture in colander and rinse with warm water; drain well. Combine sugar, nutmeg, dry mustard, turmeric, celery seed, black pepper, cornstarch and cider vinegar in large pot. Bring to a boil. Add zucchini-onion-pepper mixture and cook slowly for 20 minutes. Stir occasionally. Place in clean, hot pint jars and seal with lids. Relish may be processed in hot water bath for 10 minutes. Yield: 6 to 7 pints.
