Zucchini relish
Ingredients/Components
- sugar - 6 c
- salt - 5 Tbsp
- cornstarch - 1 tsp
- nutmeg - 1 tsp
- dry mustard - 1 tsp
- black pepper - 1/2 tsp
- celery seed - 2 tsp
- onion - 4 c
- white vinegar
- turmeric - 1 tsp
- green bell pepper - 1 item
- zucchini - 10 c
- red bell pepper - 1 item
How to make zucchini relish:
Chop fine the zucchini, bell peppers and onion. Mix with salt. Let stand, covered, in refrigerator overnight. Drain and rinse in cold water. Add remaining ingredients. Cook 20 minutes and seal in hot jars. Makes 6 pints.Recipe categories: Squash, Condiments, etc., Zucchini.
