Zucchini relish
Ingredients/Components
- sugar
- cornstarch - 1 Tbsp
- nutmeg - 1 Tbsp
- vinegar
- dry mustard - 1 Tbsp
- pepper - 1/4 tsp
- celery salt - 2 tsp
- turmeric - 1 Tbsp
- pickling salt - 5 Tbsp
- ground onions - 4 c
- ground zucchini, not peeled - 10 c
- green and 1 red pepper, chopped fine - 1 item
How to make zucchini relish:
Put zucchini, onion and pickling salt in large bowl. Mix well and refrigerate overnight. Drain and rinse in cold water. Drain again and place in large kettle with remaining ingredients. Bring to a boil and simmer 30 minutes uncovered, stirring occasionally. Pour into hot pint jars and seal. Makes 6 to 8 pints.Recipe categories: Squash, Condiments, etc., Zucchini.
