Zucchini relish
Ingredients/Components
- sugar
- salt - 5 Tbsp
- cornstarch - 2 Tbsp
- vinegar
- ginger - 1 Tbsp
- grated zucchini - 10 c
- dry mustard - 2 Tbsp
- celery seed - 2 Tbsp
- turmeric - 1 tsp
- green peppers, chopped - 2 item
- large chopped onions - 4 item
- red peppers, chopped - 2 item
How to make zucchini relish:
Combine zucchini, onions and salt. Let stand overnight; drain well. In a saucepan, cook sugar, cornstarch, celery seed, mustard, turmeric, ginger and vinegar over medium heat until fairly thick. Add zucchini mixture and the peppers. Continue cooking until thick. Then boil 1/2 hour, stirring frequently. Place in sterile jars and process 1/2 hour (pint jar).
