Zucchini relish



Ingredients/Components
- sugar - 4 c
- salt - 5 Tbsp
- cornstarch - 1 Tbsp
- vinegar
- dry mustard - 1 Tbsp
- pepper - 1/2 tsp
- celery seed - 1 tsp
- red pepper - 1 item
- green peppers - 2 item
- turmeric - 1 Tbsp
- hot pepper - 1 item
- ground zucchini - 10 c
- ground onions - 4 c
How to make zucchini relish:
Grind together zucchini, onions and all peppers. Sprinkle 5 tablespoons salt on top. Cover and let set overnight. Rinse 2 times in cold water. Take the vinegar, sugar, dry mustard, turmeric, cornstarch, celery seed and pepper and bring to a boil. Dump zucchini in. Simmer 20 minutes. Pack in jars and seal.
