Zucchini relish
Ingredients/Components
- sugar
- salt - 5 tsp
- cornstarch - 2 Tbsp
- nutmeg - 1 tsp
- vinegar
- dry mustard - 1 tsp
- chopped onions - 4 c
- turmeric - 1 Tbsp
- red and green pepper, chopped - 1 item
- peeled zucchini - 10 14
How to make zucchini relish:
Grind zucchini and onion; add salt. Let stand overnight; drain, rinse in cold water; drain. Combine vinegar, nutmeg, peppers, sugar, dry mustard, cornstarch and turmeric. Bring to a boil; add zucchini and cook for 30 minutes. Stir often. Ladle in hot jars and seal. Place in canner, cover jars with hot water.
