  • sugar
  • salt - 5 tsp
  • cornstarch - 2 Tbsp
  • nutmeg - 1 tsp
  • vinegar
  • dry mustard - 1 tsp
  • chopped onions - 4 c
  • turmeric - 1 Tbsp
  • red and green pepper, chopped - 1 item
  • peeled zucchini - 10 14

How to make zucchini relish:

Grind zucchini and onion; add salt. Let stand overnight; drain, rinse in cold water; drain. Combine vinegar, nutmeg, peppers, sugar, dry mustard, cornstarch and turmeric. Bring to a boil; add zucchini and cook for 30 minutes. Stir often. Ladle in hot jars and seal. Place in canner, cover jars with hot water. Boil for 10 minutes.
