Zucchini relish
Ingredients/Components
- coarsely chopped zucchini - 12 c
- chopped onion
- chopped green pepper - 1 c
- cloves garlic, crushed - 4 item
- plus 1/2 tsp - 1 Tbsp
- ice water - 1 item
- water - 1 c
- sugar - 5 c
- vinegar - 3 c
- mustard seed - 2 tsp
- ground turmeric - 2 tsp
- prepared mustard - 2 tsp
How to make zucchini relish:
Combine zucchini, onion, green pepper, garlic and salt in a large bowl. Add ice water to cover. Let stand 3 hours; drain well. Combine 1 cup water, sugar, vinegar, mustard seed, turmeric and mustard in a large Dutch oven. Bring to boil. Add zucchini mixture and boil 10 minutes.Quickly ladle hot mixture into hot sterilized jars, leaving 1/4-inch headspace. Remove air bubbles and wipe jar rims. Cover at once with metal lids and screw on bands. Process in boiling water bath for 10 minutes. Yield: 4 quarts.
