Ingredients/Components

  • coarsely chopped zucchini - 12 c
  • chopped onion
  • chopped green pepper - 1 c
  • cloves garlic, crushed - 4 item
  • plus 1/2 tsp - 1 Tbsp
  • ice water - 1 item
  • water - 1 c
  • sugar - 5 c
  • vinegar - 3 c
  • mustard seed - 2 tsp
  • ground turmeric - 2 tsp
  • prepared mustard - 2 tsp

How to make zucchini relish:

Combine zucchini, onion, green pepper, garlic and salt in a large bowl. Add ice water to cover. Let stand 3 hours; drain well. Combine 1 cup water, sugar, vinegar, mustard seed, turmeric and mustard in a large Dutch oven. Bring to boil. Add zucchini mixture and boil 10 minutes.

Quickly ladle hot mixture into hot sterilized jars, leaving 1/4-inch headspace. Remove air bubbles and wipe jar rims. Cover at once with metal lids and screw on bands. Process in boiling water bath for 10 minutes. Yield: 4 quarts.
