  • eggs - 3 item
  • vanilla - 2 Tbsp
  • salt - 1 tsp
  • chopped nuts - 1 c
  • oil - 1 c
  • soda - 1 tsp
  • baking powder - 1 tsp
  • all-purpose flour - 3 c
  • raisins - 1/2 c
  • crushed pineapple, drained - 1 c
  • zucchini, peeled, grated and drained - 2 c

How to make zucchini pineapple bread:

Beat eggs until fluffy. Add sugar, vanilla, oil, zucchini, flour, baking powder, salt and soda. Stir in pineapple, raisins and nuts. Mix well. Bake in 2 well-greased 9 x 5 x 4-inch loaf pans for 1 hour at 325°.
