Zucchini pie
Ingredients/Components
- milk - 1/2 c
- salt - 1/4 tsp
- margarine or butter - 1 Tbsp
- beaten egg - 1 item
- beaten eggs - 3 item
- pepper - 1/4 tsp
- clove garlic, minced - 1 item
- grated Parmesan cheese - 1/4 c
- chopped onion - 1/4 c
- shredded Swiss cheese - 3/4 c
- fresh oregano or 1/2 tsp - 2 tsp
- refrigerated loose-pack hash brown potatoes - 3 c
- medium zucchini, sliced thin - 2 item
How to make zucchini pie:
In large bowl, combine 1 egg, onion and Parmesan cheese. Stir in potatoes. Pat mixture into a 9-inch pie plate or a 10-inch quiche dish. Bake, uncovered, in a 400° oven for 35 to 40 minutes until golden. Cool slightly; reduce oven to 350°. In large skillet cook zucchini in garlic and butter until just tender. Cool and arrange on crust. In mixing bowl combine remaining 3 eggs, cheese, milk, oregano, salt and pepper. Pour over zucchini.
