  • milk - 1/2 c
  • salt - 1/4 tsp
  • margarine or butter - 1 Tbsp
  • beaten egg - 1 item
  • beaten eggs - 3 item
  • pepper - 1/4 tsp
  • clove garlic, minced - 1 item
  • grated Parmesan cheese - 1/4 c
  • chopped onion - 1/4 c
  • shredded Swiss cheese - 3/4 c
  • fresh oregano or 1/2 tsp - 2 tsp
  • refrigerated loose-pack hash brown potatoes - 3 c
  • medium zucchini, sliced thin - 2 item

How to make zucchini pie:

In large bowl, combine 1 egg, onion and Parmesan cheese. Stir in potatoes. Pat mixture into a 9-inch pie plate or a 10-inch quiche dish. Bake, uncovered, in a 400° oven for 35 to 40 minutes until golden. Cool slightly; reduce oven to 350°. In large skillet cook zucchini in garlic and butter until just tender. Cool and arrange on crust. In mixing bowl combine remaining 3 eggs, cheese, milk, oregano, salt and pepper. Pour over zucchini. Bake at 350° for 25 to 30 minutes.
