Zucchini pie

Ingredients/Components

• sugar
• cinnamon - 1/2 tsp
• flour
• cream of tartar
• pineapple juice - 3 Tbsp
• pastry for 2 crust pie
• washed and pared zucchini slices - 6 c

How to make zucchini pie:

Cook zucchini until tender; cool and drain. Add remaining ingredients and place in unbaked pie shell. Cover with top crust and seal edges. Cut slits for steam to escape. Bake at 375° for 45 minutes.
