Ingredients/Components
- butter or margarine - 1 item
- salt - 1/2 tsp
- oil - 1 item
- baking powder - 1/2 tsp
- unbleached flour - 1/2 c
- oregano - 1/4 tsp
- minced onion - 1/4 c
- lemon wedges - 1 item
- large eggs, beaten - 2 item
- coarsely grated zucchini - 2 c
How to make zucchini pancakes:
Place zucchini in strainer and press out as much moisture as possible. Mix with eggs and onion in small bowl. Combine dry ingredients and stir into zucchini-egg mixture.
