Ingredients/Components
- flour - 3 Tbsp
- beaten eggs - 2 item
- Parmesan cheese - 2 Tbsp
- chopped parsley - 1/4 tsp
- chopped chives - 1 tsp
- zucchini - 3 item
- pinch of garlic powder, salt and pepper - 1 item
How to make zucchini pancakes:
Grate the zucchini into a bowl and drain thoroughly. Stir in the eggs, 3 tablespoons flour, Parmesan cheese, chives, parsley, pinch of garlic powder, salt and pepper. If mixture looks too liquid, add the 1 tablespoon flour. Drop batter in hot, oiled skillet as for small pancakes and cook until browned.Recipe categories: Pancakes and waffles, Breakfast, Grains.
