Zucchini oatmeal cookies
Ingredients/Components
- cinnamon - 1/4 tsp
- granulated sugar - 1/2 c
- salt - 1/4 tsp
- brown sugar - 1/2 c
- nutmeg - 1/4 tsp
- baking soda - 1/4 tsp
- egg - 1 item
- all-purpose flour - 1 c
- oatmeal
- canola oil - 1/3 c
- finely grated zucchini - 1 c
How to make zucchini oatmeal cookies:
Heat oven to 350°. Beat egg, oil and both sugars until well blended. Set aside. In separate bowl, combine flour and next 4 ingredients. Stir into egg mixture. Add oatmeal, zucchini and mix well. Drop by teaspoonfuls on nonstick cookie sheet, 2-inches apart. Bake 12 minutes or until golden. Makes 2 dozen.Cal-92, CHO-14g, Pro-2g, Fat-4g.
