Ingredients/Components

  • cinnamon - 1/4 tsp
  • granulated sugar - 1/2 c
  • salt - 1/4 tsp
  • brown sugar - 1/2 c
  • nutmeg - 1/4 tsp
  • baking soda - 1/4 tsp
  • egg - 1 item
  • all-purpose flour - 1 c
  • oatmeal
  • canola oil - 1/3 c
  • finely grated zucchini - 1 c

How to make zucchini oatmeal cookies:

Heat oven to 350°. Beat egg, oil and both sugars until well blended. Set aside. In separate bowl, combine flour and next 4 ingredients. Stir into egg mixture. Add oatmeal, zucchini and mix well. Drop by teaspoonfuls on nonstick cookie sheet, 2-inches apart. Bake 12 minutes or until golden. Makes 2 dozen.
