Zucchini nut bread
Ingredients/Components
- sugar - 1 c
- baking powder - 1/4 tsp
- baking soda - 1 tsp
- egg - 1 item
- all-purpose flour
- cooking oil - 1/2 c
- grated zucchini - 1 c
- ground cinnamon - 1 tsp
- ground nutmeg - 1/2 tsp
- finely shredded lemon peel - 1/4 tsp
- chopped walnuts or pecans - 1/2 c
How to make zucchini nut bread:
Beat together zucchini, sugar and egg. Add cooking oil; mix well. Stir together flour, cinnamon, baking soda, nutmeg, baking powder, lemon peel and 1/2 teaspoon salt. Stir into zucchini mixture. Fold in nuts. Pour into greased loaf pan. Bake at 325° until done, 60 minutes. Cool in pan on rack for 10 minutes. Remove from pan.Recipe categories: Breads, Quick breads, Squash.
