Zucchini nut bread
Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- salt - 1/2 tsp
- flour
- nutmeg - 1/2 tsp
- baking powder - 1/4 tsp
- baking soda - 1/2 tsp
- egg - 1 item
- chopped walnuts - 3/4 c
- cooking oil - 1/4 c
- finely shredded lemon peel - 1 tsp
- finely shredded zucchini, unpeeled
How to make zucchini nut bread:
In a mixing bowl, stir together flour, cinnamon, baking soda, salt, nutmeg and baking powder. Set aside. In mixing bowl, beat together sugar, zucchini and egg. Add oil and lemon peel; mix well. Stir flour mixture into zucchini mixture and nuts. Pour batter in 8 x 4 x 2-inch pan. Bake at 350° for 55 to 60 minutes or until toothpick inserted in middle comes out clean. Cool in pan for 10 minutes, then turn out and cool on rack. Wrap and refrigerate overnight.Recipe categories: Breads, Quick breads, Squash.
