Zucchini loaf
Ingredients/Components
- sugar - 3/4 c
- cinnamon - 2 tsp
- eggs - 2 item
- vanilla - 2 tsp
- salt - 1/4 tsp
- flour
- oil - 1/2 c
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- cloves - 1/4 tsp
- shredded yellow squash or zucchini
How to make zucchini loaf:
Combine dry ingredients and set aside. In a large bowl, combine eggs, sugar, oil and vanilla. Beat well in mixer. Stir in squash. Add dry ingredients, stirring only until moistened. Optional nuts and/or raisins may be stirred in. Pour into greased and floured 9 x 5 x 3-inch loaf pan. Bake at 350° for 50 minutes or until done. Test with toothpick.
