Ingredients/Components

  • sugar - 3/4 c
  • cinnamon - 2 tsp
  • eggs - 2 item
  • vanilla - 2 tsp
  • salt - 1/4 tsp
  • flour
  • oil - 1/2 c
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • cloves - 1/4 tsp
  • shredded yellow squash or zucchini

How to make zucchini loaf:

Combine dry ingredients and set aside. In a large bowl, combine eggs, sugar, oil and vanilla. Beat well in mixer. Stir in squash. Add dry ingredients, stirring only until moistened. Optional nuts and/or raisins may be stirred in. Pour into greased and floured 9 x 5 x 3-inch loaf pan. Bake at 350° for 50 minutes or until done. Test with toothpick. Let remain in pan 10 minutes, then remove to cool.
